"Deal with?" Katsuya raises an eyebrow, chopsticks halfway to his mouth before he sets his bowl down again. "You mean like, cleaning?"
He's so used to beheading, gutting and filleting his own seafood he almost doesn't understand what the question is. It's the freshest when it's whole, so it's pretty common to just do all of that at home.
"I can show you. It's not terribly difficult but it does take practice."
